What is egg-crystals egg wash spray?
OvaEasy Egg wash is an all-natural spray that replaces traditional shell egg wash for greater consistency, convenience and production efficiency. Produced with our proprietary crystal egg® drying process, it reconstitutes quickly with water to deliver 100% natural whole egg shine and browning to baked goods in a convenient and sanitary spray application. OvaEasy egg wash adds high-quality shine, protects the integrity of raw dough and prevents dough collapse without the mess and waste of traditional egg washes.
Direction for use
- Fill bottle with cold water to fill line.
- Remove cap and insert sprayer. Use a new sprayer with each new bottle.
Spray onto bakery products at 45º angle.
- Replace cap and shake well. Egg
- Crystals must be fully reconstituted before use to avoid clumping.
- Refrigerate unused spray egg wash; may be kept up to 5 days under refrigeration.

Baker’s depend on whole egg wash to give their baked goods that “just right” sheen that drives visual appeal and whets the appetites of customers. But in commercial bakery operations, using traditional shell eggs is a messy, time consuming operation with hidden labor costs in preparation, application and clean up. Process inconsistencies across bakeries can also lead to unpredictable and inconsistent results
OvaEasy® Crystal Egg Wash is simply whole eggs dehydrated by our proprietary low temperature crystal drying process and pre-portioned in an easy to use, disposable spray bottle. Shelf stable at room temperature, just add water and mix to get easy application, consistent coverage rates and easy clean-up to deliver great results with less work and hassle. And each bottle can be kept refrigerated for up to 5 days to reduce waste and save time in later use.
Shelf life: 24 months unopened if stored in cool dry place. Shelf-life is measured from the date of production (not the day you order). Generally the product you receive should be at most no more than a few months old.

Have you ever heard of sun-dried tomatoes? We decided to take a hint from Mother Nature and copy her at her best. We’ve discovered a way to use the same principles that go into making sun-dried fruits and apply it to one of Mother Nature’s most amazing foods…egg!
Our crystal freeze-drying process is special because it works at low-temperature and doesn’t damage the flavor or functionality of the eggs. We start with wholesome fresh eggs and gently evaporate the water, leaving only little crystals of pure egg. That’s why we call them Egg Crystals! When you go to cook our Egg Crystals later, they taste just like fresh eggs!
Other egg powders are made with a process called spray-drying that’s been around since at least the 1930’s. It’s a process designed for cheap industrial products. Spray drying exposes egg to very high temperatures – usually 390º F – to remove moisture.
Egg is very sensitive to heat. Just think of how quickly you can fry an egg in a pan, you can even fry an egg on the hood of car on a sunny day. The very high temperatures used in spray drying ruins the egg whites and denatures the protein. And those spray dried powders end up with off-flavors, diminished nutritional value and lower functionality. Spray dry egg companies do this because they’re producing for cheap industrial markets and they’re trying to produce as cheaply as they can. Powdered egg is typically used in mass market baked products, cookies, muffins, pasta and things like that. They’re not meant to be eaten by themselves, only as a small ingredient in another food product so you can’t notice the off-flavors.
